All Spirits Events designs wine, cheese, and chocolate pairing experiences across New York City and the United States — led by founder Adam Levy, who has built editorial expertise in all three crafts.

Adam Levy is the founder of the New York International Wine Competition, the trade-judged competition that brings winemakers and sommeliers from around the world to evaluate wines by category and price point. He is also the editorial voice behind The Alcohol Professor, The Cheese Professor, and The Chocolate Professor — a rare combination of editorial depth across all three crafts. Your guests get the same level of context on the cheese and chocolate as on the wine in the glass.

Curated from real visits to winning wineries

Adam has traveled to visit award-winning wineries across multiple continents — Bordeaux and Burgundy, Tuscany and Rioja, Napa and Sonoma, Mendoza, Margaret River, and the Cape Winelands. These visits are research, not tourism. When we pour a Sangiovese at your event, we can tell you who made it, when Adam tasted it at the estate, and what they served alongside.

What we actually pair

A few directions we’ve designed for past clients:

  • Champagne + aged Comté + dark single-origin chocolate — bright acidity, salty crystalline nuttiness, deep cacao.
  • Bordeaux blend + washed-rind cheese + 70% Madagascar chocolate — tannin, funk, and bright fruit-forward chocolate in conversation.
  • Vintage Port + Stilton + 85% dark chocolate — the classic dessert trinity, done at the highest level.

We design the order, storytelling, and a takeaway recipe card guests can use at home.

Formats — how it fits into your event

  • Standalone tasting — a 60- to 90-minute hosted pairing for 5 to 50+ guests.
  • Dinner course or dessert experience — a pairing module woven into a multi-course menu, coordinated with your caterer.
  • Gala or cocktail-hour station — a curated pairing station guests drift through; works beautifully at fundraisers and brand activations.

Brand-neutral sourcing — real producers, real bottles

All Spirits Events does not sell wine, so each pairing is curated around what works on the palate. Wines come from importers and medal winners from the New York International Wine Competition; cheeses from artisan producers built through The Cheese Professor; chocolate from craft makers and single-origin specialists. If your venue has strong inventory, we can curate from what is on the shelf.

Group sizes and where we host

We host pairings as small as 10 guests — intimate dinners and executive experiences — and as large as 50 or more for corporate, gala, and brand-activation settings. In New York we host across private homes, restaurants and venues; nationally we travel for events in any major U.S. city.
